Banana, Date, Pecan and Tia Maria Loaf


Hmmmm...banana loaf with a few added extras! This is a recipe I adapted from a banana loaf on BBC Good Food. I hate this word but this cake is so moist. It has a lovely texture and the pecans add a bit of bite. It is pretty straightforward and tastes yummy warm from the oven!




Ingredients

200g unsalted butter, softened

150g golden caster sugar

50g soft light brown sugar

3 large eggs

200g self-raising flour

1.5 tsp baking powder

2 tsp cinnamon

Pinch of salt

3 ripe bananas, mashed

3-4 tbsp Tia Maria

100g dates, chopped

50g pecans, chopped


100g icing sugar

2 tbsp water

1 tbsp Tia Maria


Method

1. Oven to 160°C fan/180°C. Line and grease 2lb loaf tin.



2. Cream together butter and sugar.



3. Combine eggs in a bowl. Put flour, baking powder, cinnamon and salt in another bowl and whisk to combine.

4. Add half the eggs to butter mixture, mix to combine. Add half the flour, mix to combine. Repeat.

5. Mix mashed bananas and Tia Maria. Add to butter and egg mixture. Mix to combine.

6. Add chopped dates and pecans. Mix to combine.



7. Tip into loaf tin. Bake for 35 minutes or until skewer comes out clean.


I had some extra batter so I made some muffins too!

8. Combine icing sugar with 2 tbsp of water and 1 tbsp of Tia Maria. Drizzle over the warm loaf. Slice and enjoy!
