Briony's Boozy Brownies - Spice Rum, Raisin and Orange Chocolate brownies


Chocolate, check! Booze, check! More chocolate, check! What more could you want from a brownie?! These are so tasty and super easy to make. If you want a good, strong rum flavour (let's be honest, who wouldn't?!), it is best to soak the raisins in the rum overnight. I adapted this from All Recipe UK's brownie recipe (http://allrecipes.co.uk/recipe/6023/quick-and-easy-brownies.aspx) The first recipe has pictures to help with the method, the second recipe is just the method. I hope you like these delicious treats as much as I do!



Ingredients


100g raisins

50ml spiced rum (I used Kraken)


100g soft light brown sugar

300g golden caster sugar

225g unsalted butter, softened

60g cacao powder (or cocoa powder)

1 tsp orange extract

4 medium eggs

225g plain flour

½ tsp baking powder

½ tsp salt

100g dark chocolate chips


50g chocolate orange (for decoration)


Method


Day before

1. Raisins in a bowl. Cover with spiced rum. Cover with cling film. Leave to soak overnight.



On the day

2. Oven on to 180°C. Line tin with baking parchment.

3. In stand mixer or bowl, mix sugars and butter until smooth. Sift in cacao or cocoa powder. Mix. Add orange extract and eggs. Mix. Add flour, baking powder and salt. Mix until smooth. Add choc chips and rum soaked raisins. Mix to combine. Tip into tray. Smooth top.



4. Bake for 25 minutes until set. Leave to cool in tray.



5. Melt choc orange in microwave in 30 second blasts until smooth. Drizzle over brownies. Slice up and enjoy!
