The Very Hungry Caterpillar Cupcakes
Fancy making your very own Very Hungry Caterpillar? Here is my very special recipe with easy to follow instructions and a few videos to help you on the way!
200g unsalted butter, softened
200g golden caster sugar
200g self raising flour
250g unsalted butter, softened
500g icing sugar
Food colouring: green, red, yellow
50g black fondant
2 cocktail sticks
16 cupcake cases
Oven on to 160°C fan/180°C. Place 16 cupcake cases on a baking tray.
Beat the butter and sugar together until light and fluffy. Add the eggs one at a time, mixing well after each one. Add the flour and mix to combine. Divide the batter between the cupcake cases. Bake for 18-20 minutes until golden and risen. Set aside to cool.
Make the icing. Beat the butter until light. Add the icing sugar and beat for a few minutes until smooth. Place 2 tablespoons of icing into a separate bowl, add red food colouring and mix well. Place 1 tablespoon of icing in another bowl, add yellow food colouring and mix well. Add enough green food colouring to the remaining icing to create a pale green colour. Place a star nozzle in a piping bag, then use a paintbrush to paint stripes of the green food colouring up the inside of the piping bag. Add the green icing.
Place 9 cupcakes in the shape of the Very Hungry Caterpillar. Place the remaining 6 cupcakes in a leaf shape.
5. Pipe green icing (I did it in rose shapes) onto the 8 cupcakes that make up the caterpillar body. With the remaining green icing, split in two and add more green food colouring to one half to make it darker. Place both greens in separate piping bags and cut a ½cm hole in the ends. Pipe dark green icing onto one half of the leaf and pale green on the other. Pipe a stalk.
6. Add the red icing to a piping bag with a star nozzle and pipe onto the head. Add two spots of yellow icing to the head cupcake for eyes then pipe on dark green pupils and a mouth.
7. Break off a small piece of black fondant to make a 2cm circle, place on the leaf. Shape the rest of the fondant into 6 legs and 2 tentacles. Use the cocktail sticks to attach the tentacles to the head and place the feet along the body.
